I love going to the pumpkin patch and finding that perfect pumpkin to carve for Halloween. Because I’m always too busy carving my pumpkin’s face to save any of the meat for baking or cooking, I needed to find some lazy pumpkin pancake mix to enjoy. While at Trader Joe’s, I happily found two pumpkin pancake mixes!
Trader Joe’s Pumpkin Pancake and Waffle Mix and Gluten Free Pumpkin Pancake Mix both provide deliciousness and feelings of warmth and coziness. The pumpkin aroma alone emanating from the kitchen while making these fully completes my autumn season.
Both pumpkin pancake mixes are easy to make and have equal pumpkin aroma and flavor. The outward appearance is about the same, with the gluten free just slightly less yellow. The textures differed a bit: The regular mix has more fluff and air offering a dryer pancake. However, the dryness can be easily fixed with a bunch of butter and syrup. The gluten free mix created a more dense and moist pancake.
Which pumpkin pancake mix is better depends on your preferences and, of course, those who are gluten free do not get to choose but hopefully are pleasantly surprised by the scrumptious gluten free pumpkin pancakes.
TRADER JOE’S PUMPKIN PANCAKE AND WAFFLE MIX AND TRADER JOE’S GLUTEN FREE PUMPKIN PANCAKE MIX REVIEW:
Prep: medium effort – add an egg, melted butter and water or milk
Cooking: griddle set at 350 deg or medium, low heat. Pancakes flip easily.
Eating: presentation is a nice golden color packed with pumpkin flavor. The smell alone is worth making these pancakes. The pumpkin pancake and waffle mix offers a lighter and drier pancake while the gluten free pancake mix is more dense and moist.
Storage: they will keep for 1-2 days in the refrigerator and can reheat on griddle or in microwave.
