Trader Joe’s Buttermilk Protein Pancake Mix
It was difficult to decide where to start off on this part of the blog as I’ve had myself many a lazy cake (aka pancake mix), my favorite being the just add water types. I figured I’d start with my most recent lazy cake adventure which was Trader Joe’s Buttermilk Protein Pancake Mix review. It seemed difficult to go wrong with the pancake weight lifter and the written description of 10g of protein and 29g of whole grains in just 2 pancakes nicely decorated on the front of the box.
Turns out this mix is a little finicky in that the heat has to be just right otherwise they turn out a bit anemic and leave a sticky mess. So don’t cheat and start prematurely like me if your griddle isn’t at the designated heat (I am impatient sometimes). On electric griddles, it needs to be at 350 deg F. and over the gas stove at a higher medium heat. I also recommend following the instructions of using butter or non-stick spray even with a non-stick griddle as it does help prevent the sticking.
As for the pancakes, they have some leavening but not an amount that leads to a thick, fluffy pancake; they turn out a bit thin, with a more wet consistency.
They come up a bit short on the buttermilk flavor. Since there isn’t any sugar in the ingredients, the pancakes lack the usual sweetness one would expect. They do, however, taste much better with maple syrup. They also make a good peanut butter and jam pancake sandwich.

Prep: easy, just add water
Cooking: griddle needs to be at correct temperature, use grease to prevent sticking, a little longer than usual cooking time (about 2.5 min on the first side).
Eating: presentation is a nice golden brown. Thin, wet pancakes; lacks buttermilk and not a sweet pancake but tastes better with maple syrup or as a pb and j.
Storage: they kept in the fridge until the next day and reheated in the microwave just fine. Likely would freeze ok but we didn’t have any left over.
