The first half of our spring break 2023 brought us to Legoland in Carlsbad, California. Opening in 1999, this is the third Legoland in existence after Denmark (1968) and England (1996). In 2013 they built the first Lego themed hotel and this is where we stayed. We enjoyed a pirate themed room, found some treasure, and had two mornings of breakfast buffet at Bricks Restaurant.
Despite the crowd and chaos, the breakfast was pretty good with a lot of variety. The kids appreciated the lower height of the middle buffet so they could serve themselves. They also enjoyed looking at all of the lego builds around the dining area.
As for the pancakes, I guess I was hoping to see something more creative like a lego brick shape pancake or a lego person pancake. There is just so much unused space to wow this breakfast crowd.
Instead, we got circles. Plain circles and circles with uber sweet chocolate chips. They were fine, flat with minimal fluff. Consistency was good without any rubberiness.
The butter balls softened easily under the knife and the syrup was with good maple flavor but likely not real maple syrup (I didn’t actually get a chance to ask and verify- everything was too busy and the kids were going nuts).
The ambiance and experience is definitely worth going to the restaurant; I wouldn’t go specifically for the pancakes, but they have pancakes.
